April 20th – National Pineapple Upside Down Day

Look what I made!

I had some help from my brother in law with this today. We were planning on going out, but I didn’t want to be up in to the middle of the night baking.

So this afternoon, we mixed it all together and stuck it in the refrigerator. Once we got home from all of our touristing, I put it in the oven. I was fully expecting this not to work. Something about sitting in the fridge for several hours would mess it all up. But no, it turned out great!

I only have a small cake pan, so I put the extra batter into my trusty cupcake tin. Those didn’t look very pretty, but they were also tasty. I like making these little cupcakes each time I make a cake. Yum.

I searched and found this recipe that didn’t require yellow cake mix. I had all the ingredients except the pineapple and the cherries. I ended up not using cherries because we forgot to buy them, but I don’t regret it. Next time I’ll add them.

The fire alarm did not go off at all.
