March 4th – National Pound Cake Day

I made a pound cake in my crock pot today. And it worked!

If there is a way to use my crock pot for any of these baking days, I’ll do it. I found this recipe on the website Crockpot365. It’s an awesome site. In 2008, she made the goal to cook a crockpot meal every day. All these years later, she’s got a huge website and is a New York Times Bestselling Author.

Pushing all jealous feelings aside…

Crock Pot Pound Cake

–2 cups of all-purpose flour
–1/2 t cream of tartar (I totally wasted $4 on a new bottle before remembering I had a bunch of it in the garage from when we made playdough. Ooh. I should try to make playdough in the crockpot.)
–1/4 t salt
–1 cup butter
–1 cup sugar
–1 t ground nutmeg
–6 eggs. I know. it’s a lot. but it tastes soooooooooo good!
–1 1/2 t vanilla

This was the recipe that Stephanie gave on her blog. She said she used her small slow cooker to make it, but one of the comments said that it was too much. I only have my little slow cooker, so I always just 1/2 everything. It worked out. I don’t need a ton of pound cake.

So I threw all this together and put it in my little crockpot on high for about 3 hours. I over cooked it just a little (you can see the brown sides), because I was anticipating it not being done for 4 hours. But it turned out!

I’m doing a stupid 3 day liquid cleanse so I just tried a taste of it. Tasty! I’m hoping it’s still good tomorrow. This was a fun one. I really love using my crockpot and baking new things.
